You will see each profession has an icon that you can click you can also drag this onto a spare spot on an action bar if you'd like, for easier access. This opens up the profession and shows you what you have trained to craft. Each thing you craft that is shown as not-gray has a chance to gain a level. Every levels of the profession, there will be new things that the profession trainer can teach you - when you purchase them, they will be added to your personal profession window opened by that icon.

ALL professions have perks for every character, but some will benefit you more than others. Take Tailoring or Blacksmithing as examples: As a mage, BOTH of these will give you perks - Blacksmithing will let you craft and and lets you craft mail and plate armor, which unfortunately you cannot wear.

Tailoring will let you add embroidery to your cloak which is a very valuable enhancement, and will all your to craft cloth armor, which you CAN wear. Tailoring and alchemy both are great professions for your class, but really anything will have an upside.

Tailoring is very useful early in expansions, as you can typically craft a couple pieces of gear at max level that are very strong, but at this point in an expansion, crafting for yourself is almost a waste of time and gold. To definitively choose your profession, I recommend using Wowhead to look over all of them as options, and make your decision. Blacksmithing is ore-hungry and barely needs anything else. Cooking is obviously a secondary profession and thus doesn't really need to be planned out too well, given that it's free to take with no restrictions. With that said, though, if players are leveling Fishing, Cooking is a natural pairing with it that provides fuel for recipes and thus more access to food and drinks later.

Enchanting pairs well with a number of different professions, but it should be one that provides gear. That's because making gear and then disenchanting it for dust is one of the quickest ways to generate materials while attempting to level the profession.
